WATERTOWN, New York (WWNY) - It’s a simple recipe that can use up some of the last fresh produce of the season.

The Southern-style Tomato Pie can use your favorite pie crust recipe or a premade crust. Chef Chris Manning made a crust of 2 cups of Bisquick and a half cup of half and half that he prebaked for about 10 minutes.

Instead of the parsley the recipe calls for, you could substitute any fresh herbs, such as basil, rosemary, or sage.

This week’s featured beverage from Arsenal Street Wine and Liquor and Bottlecaps and Beverage Center is Von Trapp Brewing’s Oktoberfest Lager.

Southern Tomato Pie

- 1 9-inch pie crust

- 3 medium tomatoes, sliced thick

- 1 egg, beaten

- 2 cups shredded cheddar

- 1/2 cup cream cheese

- 1/2 cup mayonnaise

- 1/2 cup grated parmesan

- 1 clove garlic, minced

- 1/4 cup chopped fresh parsley

- Salt and pepper to taste

Line a 9-inch pie plate with the crust and layer tomatoes on the bottom. Season with salt and pepper.

Mix the rest of the ingredients together and spread the mixture evenly over the tomatoes.

Bake at 350 degrees for 45 minutes or until golden brown. Serve with grilled meats and a side salad.
